One of my father’s traditional Filipino recipes. This particular recipe has a very distinct and unique taste. It tastes great for any occasion! Pork may be used in this recipe instead of chicken, and it always goes great on rice! On a semi related note, you may notice the lighting in this image is a bit off. That’s because this was taken during a power outage! It made for a perfectly heartwarming meal in a horribly cold house. Thank the Lord for gas stoves!
Ingredients:
- 2 lbs Chicken
- 1 tsp Black Pepper
- 1/2 tsp Salt
- 1 tsp Mrs. Dash
- 1 cup Spiced White Vinegar (Make sure some of the spices make it to the pot)
- 1/4 cup Soy Sauce
- 6 Bay Leaves
- 3 cups Water
- 1 tsp Garlic
Directions:
- In a large pot, pan sear the chicken until golden brown
- Add all of the aromatic dry ingredients to the pot, and allow the flavor to develop for a few minutes, being careful not to burn the spices
- Add the rest of the ingredients to the pot and stir
- Simmer on medium heat until the chicken is done, about 45 to 50 minutes
